Gobbler Rice
Bowls
Peel and shave
3 carrots. Set aside. Cook 2-4 c brown rice in rice cooker. Place 5 oz frozen
spinach into microwave proof dish. Thaw in microwave and squeeze it dry. Set it
aside to warm up at the end.
In a large
skillet, heat 2 T olive oil over medium.
Fry 5 eggs. Set aside in covered dish.
Add 2 T olive
oil to skillet and let it heat up. Add 2
sliced green onions. Cook stirring occasionally for about 3 minutes. Add 2
cloves chopped garlic and cook for 1 minute.
Push garlic and onions to side of pan; raise heat to medium high and add
1 ¼ # ground turkey. Cook, stirring occasionally, until no pink remains (about
10 minutes). Add ½ c tamari sauce and
cook, stirring occasionally, until thickened, about 2 minutes. Heat spinach at
this time so it’s warm to serve.
Divide rice
into 5 bowls. Add ground turkey,
carrots, green onions, spinach and top with a fried egg.
