Creamy White Chili
1 T olive oil
1 # skinless
boneless chicken breast halves cut into ½ inch cubes
1 onion chopped
2 - 15.5 oz
cans great northern beans, rinsed and drained
1 (14.5 oz) can
chicken broth
1 tsp salt
1 tsp ground
cumin
1 tsp oregano
½ tsp black
pepper
¼ tsp cayenne pepper
At the end add 1
c sour cream and ½ c whole milk
Note: Dry beans
1# dry (2 c) = 5-6 c cooked
Heat olive oil
in a large saucepan over medium heat; cook and stir chicken, onion, garlic in
hot oil until chicken is no longer pink and juice run clear (10-15 min).
