Here is the information on 72 hour kits - it's a lot so I'll do it in four chunks - see all of them for a complete view of what you can do. But don't be overwhelmed. It's a lot of information because each family will use a little and make their kits very specific for their needs.

Soft Tacos for everyone


One of the things I have to consider when I make dinner these days is how to make a meal for the two who eat "normally" and me - the one who no longer eats sugar and most wheat and dairy.
I like these buffet type meals because everyone can choose what they want. Yup - there are some picky eaters in my family, but I guess I'm one too now.

Yesterday: By making the black beans from scratch (I make a lot and freeze some as well as use them for flour-less Brownies) the previous day, it makes my dinner prep a lot easier.

1-5 hours before: * wash and chop up lettuce,olives and green onions for soft tacos
                           * put together fruit and veggie platter
                            * shred cheese

20 min before:  * Cook up 1/2 # 85/15 hamburger and 1/2# turkey burger,
                        (add what you'd like - I used oregano, cumin, garlic, and dried onions).
                         * set the table - w condiments, tortillas, fruit & veggie platter, etc.
                        * warm up the beans in the microwave
                        * prepare alternate wraps (I used 2 tapioca wraps under warm water for 40 seconds)
Put all the warm things on the table and eat.
