Cinnamon Sweet Potato Fries
1 large sweet potato
1 T olive oil
1/2 tsp cinnamon
1/4 tsp salt
Preheat oven to 425 F.
Cut sweet potato into 2 " long by 1/4" sticks
Place on cookie sheet. Drizzle with oil, sprinkle with cinnamon and salt. Toss thoroughly to coat.
Bake for 15 min, toss and bake for 15 more minutes.
