Cilantro Lime Chicken

 1 lb boneless and skinless chicken breast

2/3 c orange juice

1 c chicken broth

juice of 2 fresh limes (or 2 T lime concentrate)

1/4 tsp pink Himalayan salt

1 tsp onion powder

2 tsp minced garlic (or 3/4 tsp garlic powder)

1/2 c chopped cilantro leaves

1 can black beans (1 c., drained and rinsed)

2 tsp ground cumin

Add all ingredients to gallon sized freezer bag or container for instant pot

Make it now: Add to either an instant pot or crockpot and cook as directed below.

Make it a freezer meal: seal bag, removing as much air as possible and freeze.

Cook in instant pot: From frozen - add contents to instant pot. Saute for 5 minutes or until you have about 1/4 c liquids. Cook for 12 minutes at high pressure then allow 10 minutes for natural release.

From thawed or freshly made - transfer into an instant pot. Cook for 9 minutes at high pressure, then allow 10 minutes for natural release.

Serve with rice, guacamole, cilantro. Or serve with tacos or nachos.

If dairy is part of your diet, add sour cream too.

Very good - I've had it both ways. Fresh and frozen. Doesn't dry out. The little lime taste comes through nicely.
