Banana Muffins - mom's way


I've found that using some tapioca flour really helps to lighten the otherwise 
denser flours I use when baking. A good combination of many flours helps a lot! 
I tend to use at least 1/3 of the flour as oat flour that I blend myself in my food processor from rolled oats. I don't buy any kind of gluten free variety - just the Old Fashioned Whole grain variety.
