This nutritious, easy to make Low Sugar French Blueberry Toast Casserole is deliciously light and fluffy and filled with fiber and fruity goodness. No need to add any toppings!

Ingredients
  • small soft white rolls/buns broken up into chunks
  • 1 cup frozen blueberries
  • 4 eggs
  • 1/2 cup semi-skimmed milk
  • 2.5 tbsp butter, melted
  • 2 tbsp demerara (raw) sugar
  • 1.5 tbsp wheatgerm
Instructions
  1. Preheat the oven to 375 F/ 190 C/ gas mark 5. You will need a medium casserole dish (approx. 6 cm deep).
  2. Place the bread chunks in your oven dish (they should be nice and snug though not overlapping one another). Whisk together the eggs and milk and pour over the bread. Stir thoroughly and set aside for 5 minutes, stirring occasionally to ensure all the bread pieces have soaked up the egg mixture.
  3. Pour in the frozen blueberries, tuck them in between the bread pieces, leaving some on the top. Sprinkle the wheatgerm and sugar over the whole thing, drizzle with the melted butter and bake for 30 minutes.
  4. Remove from the oven and enjoy!

My changes - Use Dave's Killer bread, Almond milk, Coconut cream (for butter), Stevia, and no wheatgerm.
