Pioneer Bread

I've tried a few new recipes with varying results.

                                                                  Pioneer Bread
1 (0.25 oz) package yeast (or 1 T)
2 T brown sugar
1/2 c warm water
1 c hot milk (not boiling)  ** I used powdered milk 
2 tsp salt
1/2 c dark molasses
1/2 c butter    ** I used olive oil
1 c cold milk
1 egg beaten
5 1/2 c whole wheat flour

In a small bowl mix together yeast, sugar, and warm water. Set aside and let rise until foamy.

As always, start with the yeast. Be sure your water temperature is just right - like a warm bath.

In a large bowl combine hot milk, salt, molasses, and butter until dissolved.

While the yeast is rising, warm up the milk in the microwave and add the oil and molasses.

Mix well



Measure the cold milk, Drop the eggs in and whisk. Then add this to the other mixture.




Stir in the flour, mixing well after adding half. Then add the other half. Mix completely. Put into two well-greased loaf pans. Let rise for one hour. No need to knead. Then bake at 350 F for 35 min.  (or in a glass pan, 325 F for 40-45 min).

Cook completely. Then cool before removing from the pan. I'll try butter and whole milk next time.

This bread is the one in the middle - not bad. A bit crumbly.
