Sweet Pork for Burritos

Goes great on burritos or tacos, but good by itself too.


3# pork shoulder roast
2 c salsa
12 oz root beer
2 c brown sugar
fajita seasoning (1/2 oz) and taco seasoning (2 T) mix
    (see below for optional hand mixed spices)
opt: 1 - 7 oz can green chilis

(my mix) 2T dried onions, 2 tsp Cajun seasoning, 1 tsp crushed red pepper, 1 tsp garlic pwd, 1 tsp oregano

Directions: 
  1. Place pork roast in a slow cooker and add 4 cups water. Cook on High for 5 hours.

  2. Remove pork from the slow cooker and drain liquid. Cut pork into 4 pieces and set aside.

  3. Purée salsa in blender. Combine salsa, cola, brown sugar, fajita seasoning, taco seasoning, and green chiles in the slow cooker. Return pork to the slow cooker and cook on High for 3 hours.

  4. Remove pork and shred it with 2 forks.

Yogurt made w BioGaia

I'm back to eating a little dairy and wanted to make some yogurt with lots and lots of good natural enzymes. I found these instructions below- an excerpt from Dr. William Davis.

Step One - buy BioGaia tablets

Step Two - Read thru the entire process and decide which route you want to go. I chose the ** easy (took eight hours), simple (used the oven and a glass bread pan) and fast (using yogurt as a start) one.

Step Three - buy other ingredients. Once you decide how thick/thin you want your yogurt, you'll chose to buy Heavy Whipping Cream and/or whole milk. Be sure you have natural plain or greek yogurt. No sugar. I used Nancy's Plain Yogurt.

2 T Homemade BioGaia Yogurt, 1 1/2 c Heavy Whipping Cream, 1/2 c Whole Milk.



1 c whole milk + 1 c heavy whipping cream1 T pectin2-3 crushed BioGaia tablets4 T yogurt (natural) #In IP on the yogurt setting for 30 hours.
#I put my greek natural yogurt in the freezer using an ice cube tray, Use 4 and put them in the microwave for 1:45 min on 3 to soften.

** FOR the very first batch (the base) THIS IS THE METHOD I USED**

16 ounces heavy whipping cream (preferably organic)

2 tablespoons full-fat yogurt with live cultures 10 crushed BioGaia tablets 1 T Apple PectinPut in IP on yogurt setting for 30-32 hours. Refrigerate to thicken, then eat. Save 2 T for next batch.


Method:

The probiotic tablets can be crushed using a mortar and pestle or other hard object (clean stone, bottom of a thick drinking glass, rolling pin, etc.).

In large glass/ceramic bowl, combine 2 tablespoons of liquid with the crushed probiotic (or 2 tablespoons of previously made yogurt). We start by making a slurry, as inulin or potato starch will form hard clumps if added to the entire volume.

Mix thoroughly by hand and make sure the prebiotic is dissolved. Then add the remaining liquid and stir.

Maintain the mixture at 100 degrees F for 24-48 hours. This can be accomplished with a yogurt maker, Instant Pot (yogurt setting)++, sous vide device, rice cooker, or any other device that allows maintaining a continual temperature in this range.

To make subsequent batches, reserve a few tablespoons from the prior batch and use in place of crushed tablets, since your yogurt should contain plentiful microbes.

Consume:

We then consume 1/2 cup per day. I have mine with fresh or frozen blueberries and a squirt of stevia. The end-result should be thick and delicious, better than anything store-bought.

One Pan Blackened Sweet Potatoes and Zucchini

 Love this recipe. Today I'm just doing the Sweet potatoes and Zucchini. 

I try to find recipes that have more protein than carbs, or even amounts. This meets the latter requirement. Clean up is easy! 











If you don't bake the fish at the same time, just drop the baked sweet potatoes 
and zucchini onto some cooked meat and enjoy.

Personal Luau - Coconut Cream Pie

 This has got to be one of my all time favorite desserts. It tastes decadent after not having sugar and "regular" desserts. It takes awhile and has more carbs than I typically eat now (for the last year). But I make it when everyone else is eating pie (Thanksgiving? absolutely). And eventually it may be something that one of my family members might attempt for my birthday. Hint. Hint. I like pie on my birthday. :) 

Tip - use the Oatmeal Crust recipe I already posted on 11/24/21.













 

Personal Luau - Oven Slow Roast Kalua Pork

 Kalua Pork (for Oven)

5-7 lb pork butt 10-12 ti, bok choy or spinach leaves

4 Tbsp liquid smoke 2T Hawaiian salt (or rock salt)

Cut 1 ½ inch slits around pork butt and rub surface with salt. Brown pork on all sides. Brush with liquid smoke. Wrap in ti (or one of the alternates shown above) leaves and tie with string. Wrap again in aluminum foil (shiny side in) and seal tightly. Bake at 350 F one hour.
Then add 1 c water to pan.  Drop temp to 325 F and baked an additional 3 hours. Serves 10-12.
