Beefy Mushroom Barley Soup
New and improved --
Crock Pot Beef and Barley Soup
3/4 -1 lb cubed beef stew meat (1" pieces)
1 T avacado oil
2 sprigs fresh thyme
1/2 tsp Kosher salt
1/4 tsp. black pepper
2 large carrots
3 cloves garlic, minced
1 onion, chopped
2 stalks celery, chopped
1 lb fresh mushrooms, sliced
6 c water
3 T beef bouillon cubes
2/3 c. pearl barley
- Heat 1 Tbsp avacado oil in a large skillet over MED HIGH heat. Add beef cubes and brown for 1-2 minutes per side.
- Add beef and all remaining ingredients to slow cooker and stir to combine. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours.
- Remove bay leaves and thyme stems and serve.
- Optional - add to soup before serving: 1/4 c sour cream
