Emily’s Chocolate
Chip Banana Bread
Dry Ingredients:
Mix and set aside.
2 c flour
1 tsp each:
salt, baking powder, baking soda
2 handfuls of chocolate
chips or 1 of coconut
In another bowl
cream 1 1/3 c sugar, ½ c butter.
Add 2 eggs
(beat in one at a time) and 1 tsp vanilla.
Add 2-3
bananas.
Add 1 c sour
cream or Greek yogurt. Mix well.
Add dry
ingredients above. Blend well, but don’t over mix. Place into 2 greased bread
pans (glass ok) and bake for 40-45 minutes at 350 F.
If you choose
to do muffins instead, it’ll make 2 dozen. Bake for just 20 min.
Ella’s Carrot
Coconut Muffins
2 ¼ c flour
1 TB baking
soda
2 tsp cinnamon
½ tsp salt
1 c sugar
¾ c brown sugar
3 eggs
2 sticks
butter, melted
½ c shortening
or coconut oil
2 ½ c shredded
carrot
2 c shredded
coconut
2 tsp vanilla
Combine flour,
baking soda, cinnamon, salt. In a second bowl mix sugar, brown sugar, eggs, and
melted butter. Add dry mixture to the wet along with shortening, carrot,
coconut and vanilla. Fill 18 muffin cups and bake at 350 for 15 minutes or
until a toothpick comes out clean.
