Broke da Mouth Roast Pork

4-5 # pork butt

1 can tomato sauce

1 can (use empty tomato sauce to measure) sugar

1 can (use empty tomato sauce to measure) shoyu

2 cloves garlic

Cut off excess fat from pork butt, brown in large pot. Add other ingredients. Cook over low heat, turning every 20 minutes. Cook for 2 hours. Let pork cool, then cut.

Pumpkin Upside Down Cake

 

Pumpkin Upside-Down Cake

1 cup butter, melted

1 can pumpkin

1 tsp cinnamon, ½ tsp ginger, ½ tsp cloves

1 box cake mix

Pour pumpkin into 13 x 9 greased pan. Using a fork, gently mix spices into the pumpkin.  Sprinkle cake mix over evenly. Drizzle butter over cake mix. Bake at 350 F for 30 minutes

Granola

 

Granola

¾ c coconut oil

¾ c maple syrup or honey

½ c water

1 tsp vanilla

1 tsp cinnamon

½ tsp salt

Zest from two oranges

7 c oats

1 c walnut halves

1 c coconut

½ c sliced almonds

Mix together and dump onto rimmed cookie sheet. Bake 250 F for 2-3 hours or until dry – stirring every 45 minutes.  Remove from oven and add dehydrated blueberries or raisins.

Creamy White Chili

 Creamy White Chili

1 T olive oil

1 # skinless boneless chicken breast halves cut into ½ inch cubes

1 onion chopped

2 - 15.5 oz cans great northern beans, rinsed and drained

1 (14.5 oz) can chicken broth

1 tsp salt

1 tsp ground cumin

1 tsp oregano

½ tsp black pepper

¼ tsp cayenne pepper

At the end add 1 c sour cream and ½ c whole milk

 

Note: Dry beans 1# dry (2 c) = 5-6 c cooked

Heat olive oil in a large saucepan over medium heat; cook and stir chicken, onion, garlic in hot oil until chicken is no longer pink and juice run clear (10-15 min).

Mix beans, broth, salt, cumin, oregano, two peppers and into chicken mixture; bring to a boil. Reduce heat and simmer until flavors have blended (about 30 min). Remove from heat. Set aside portion for mom before stirring in cream and milk

Gobbler Rice Bowls

Peel and shave 3 carrots. Set aside. Cook 2-4 c brown rice in rice cooker. Place 5 oz frozen spinach into microwave proof dish. Thaw in microwave and squeeze it dry. Set it aside to warm up at the end.

In a large skillet, heat 2 T olive oil over medium.  Fry 5 eggs. Set aside in covered dish.

Add 2 T olive oil to skillet and let it heat up.  Add 2 sliced green onions. Cook stirring occasionally for about 3 minutes. Add 2 cloves chopped garlic and cook for 1 minute.  Push garlic and onions to side of pan; raise heat to medium high and add 1 ¼ # ground turkey. Cook, stirring occasionally, until no pink remains (about 10 minutes).  Add ½ c tamari sauce and cook, stirring occasionally, until thickened, about 2 minutes. Heat spinach at this time so it’s warm to serve.

Divide rice into 5 bowls.  Add ground turkey, carrots, green onions, spinach and top with a fried egg.

Two Sauces: Alfredo and Pesto

 

Chicken Alfredo and Pesto

1 can or 1 c cooked chicken

1 ½ c alfredo or pesto sauce

3 c cooked fettuccini or angel hair pasta

Alfredo Sauce:

1 pt heavy whipping cream

1 stick butter

2 T cream cheese

¾ c grated parmesan cheese

1 tsp garlic powder

Place butter, cream and cream cheese in a pan. Cook on low and simmer until hot but not boiling. Add parmesan cheese and garlic. Continue simmering on low for 15 min. Do not boil!

Pesto Sauce:

2 c fresh basil or oregano leaves (you may substitute 1 c Italian parsley for one of the herbs)

¾ to 1 c grated parmesan cheese

2-3 cloves garlic (grated)

¾ tsp salt

1 c olive oil

Place all in blender or food processor. Blend well. Can be frozen up to 6 months.

Chicken & Grape Salad

 

Chicken & Grape Salad

5 chicken breasts

1 # seedless grapes

1/3 box raisins

3 stalks celery

Crushed walnuts

1 T lemon

Mayo to taste (1/3-1/2 c)

Slice cooked and cooled chicken into chunks. Slice celery into bite sized pieces. Mix lemon and mayo. Mix all the ingredients together. Use within two days.

Two Muffins - Chocolate Chip Banana; Carrot-Coconut

 

Emily’s Chocolate Chip Banana Bread

Dry Ingredients: Mix and set aside.

2 c flour

1 tsp each: salt, baking powder, baking soda

2 handfuls of chocolate chips or 1 of coconut

 

In another bowl cream 1 1/3 c sugar, ½ c butter.

Add 2 eggs (beat in one at a time) and 1 tsp vanilla.

Add 2-3 bananas.

Add 1 c sour cream or Greek yogurt. Mix well.

 

Add dry ingredients above. Blend well, but don’t over mix. Place into 2 greased bread pans (glass ok) and bake for 40-45 minutes at 350 F.

 

If you choose to do muffins instead, it’ll make 2 dozen. Bake for just 20 min.


Ella’s Carrot Coconut Muffins

2 ¼ c flour

1 TB baking soda

2 tsp cinnamon

½ tsp salt

1 c sugar

¾ c brown sugar

3 eggs

2 sticks butter, melted

½ c shortening or coconut oil

2 ½ c shredded carrot

2 c shredded coconut

2 tsp vanilla

Combine flour, baking soda, cinnamon, salt. In a second bowl mix sugar, brown sugar, eggs, and melted butter. Add dry mixture to the wet along with shortening, carrot, coconut and vanilla. Fill 18 muffin cups and bake at 350 for 15 minutes or until a toothpick comes out clean.

Plum Sauce (sweetened w/ Stevia)

Stevia Sweetened Plum Sauce

1 lb plums (pitted and sliced)
1/4 c water
1/4 c apple cider vinegar
2 T tamari sauce
1 T fresh ginger
1 clove minced garlic
1/2 tsp cinnamon 
1/4 tsp cayenne pepper
Combine in instant pot. 10 min on high. Then let it natural release for 10 min. 
Put IP on saute.
Add both 1/4 c granulated stevia and whisk the 1/2 tsp xanthum gum into the hot sauce. Simmer for 8 min to thicken. 
Use immersion blender to puree.
Let it cool. 
Place in the fridge for 10 days or in the freezer for later.

Easy Pumpkin Bars

It's almost Fall - time for pumpkin treats! 
Some people call this dump cake, but that doesn't give it the glory it deserves. 
See that moist pumpkin pie filling on the bottom? It's covered with a chewy, buttery loveliness. Hard to describe. 

I took the recipe from the Cake Mix Bible. 

It's got dairy, sugar and flour, all the things I don't eat anymore. But when I need something quick for guests, this is a good go to. 

Notes:
4 medium eggs= 3 large eggs

My sub for pumpkin pie spice: 3 tsp cinnamon, 1/2 tsp ground ginger, 1/2 tsp nutmeg.

If you don't have evaporated milk, but have powdered, it's a snap. You use half of the water to mix. Ex: 3/4 c powder with 2 c water. Use warm water and whisk til frothy. Chill thoroughly before using. 
I highly recommend adding homemade whipping cream to pass around with the bars. Delish!
